Gluten & Nut Free Granola


This nut free granola has seeds galore! Pumpkin, chia and flax seed contain vitamin E (aka tocopherol), which is a potent antioxidant! This helps decrease damage ๐Ÿ˜ต brought on by free radicals that we can control (pollution, UV rays, etc.) ๐Ÿšฌ๐Ÿ”ฅโ˜€๏ธ


Adding nuts ๐ŸŒฐ would increase vitamin E content so add them if you donโ€™t have anyone with tree nut allergies in your house!


Not only is this recipe packed with antioxidants, the oats have beta glucans which are shown to help reduce ๐Ÿ‘‡ bad cholesterol levels in the body, regulate blood sugar levels and helps promote regular digestion ๐Ÿ‘๐Ÿ‘


Here's what you'll need:


  • 2.5 cups certified gluten-free old fashioned oats

  • 3 tablespoons ground flax seed

  • 3 tablespoons chia seeds

  • 1/2 cup pumpkin seeds

  • 1/4 cup hemp hearts

  • 1/2 cup maple syrup

  • 1/2 cup olive oil

  • 1 teaspoon vanilla extract

  • 1/2 cup unsweetened coconut flakes

  • pinch of sea salt


Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Mix all ingredients together aside from wet ingredients.

  3. Mix together vanilla, evoo and maple syrup. Add to dry ingredients.

  4. Transfer to parchment lined baking sheet and spread out evenly. Bake for 20-25 minutes or until golden brown.

  5. Transfer granola to a cooling rack and allow to cool completely before breaking into chunks.

  6. Store in an airtight container at room temperature for 1-2 weeks or in the refrigerator for 3 weeks. enjoy!
