Strawberry & Beet Salad with Dill Vinaigrette (vegetarian & gluten free)

When the weather warms 🔥 up, I am all about my salad game 💯
This recipe combines earthy 🌎 beets, sweet 💕strawberries, creamy goat cheese and crunchy walnuts 😍
Beets 🎧🙃are an excellent source of folate and copper, which are crucial micronutrients that help with nutrient metabolism & brain 🧠 function. They’ve also been studied📑📚 for their benefit on blood pressure, heart health ♥️and even improving athletic performance 🚴♀️🚴♂️🚴
Beets are also a good source of gut loving fiber!🌱Fiber, as I’ve mentioned once or twice 🤭, is crucial for maintaining digestive health and a thriving gut microbiome🤗

Here's what you'll need:
Ingredients:
2 cups organic mixed greens
1 cup sliced strawberries
1/2 cup sliced beets
1/4th cup walnuts
goat cheese (optional)
Dressing:
1 tablespoon dijon mustard
1/4th cup red wine vinegar
1/2 cup extra virgin olive oil
1 tablespoon honey
salt and pepper to taste
1 tablespoon chopped dill
Directions:
Arrange all salad ingredients in bowl
To make dressing, combine all ingredients in container with a lid and shake to combine.
Spoon dressing over salad and enjoy!
