Strawberry Field Chia Seed Pudding (Dairy Free)

Yields: 2 servings


  • One 13.5 ounce can coconut milk (I used TJ brand lite)

  • 1/4 cup + 2 tablespoons chia seeds

  • 1 teaspoon vanilla

Strawberry 🍓 jam

  • 2 cups strawberries, hulled and sliced

  • 1 tablespoon chia seeds

  • Juice of a lemon

  • 2-3 tablespoon maple syrup (depending on desired sweetness)

  • Basil, julienned (to garnish)

  • Fresh strawberries to garnish


  1. Mix coconut milk, chia seeds and vanilla in a bowl and refrigerate for at least 3 hours or overnight.

  2. In a saucepan add sliced strawberries, lemon juice, maple syrup and maple syrup. Refrigerate for 3 hours or overnight.

  3. In a glass jar, layer chia pudding with strawberry jam and top with fresh strawberries and basil garnish. Enjoy!
