Yields: 2 servings
One 13.5 ounce can coconut milk (I used TJ brand lite)
1/4 cup + 2 tablespoons chia seeds
1 teaspoon vanilla
Strawberry 🍓 jam
2 cups strawberries, hulled and sliced
1 tablespoon chia seeds
Juice of a lemon
2-3 tablespoon maple syrup (depending on desired sweetness)
Basil, julienned (to garnish)
Fresh strawberries to garnish
Mix coconut milk, chia seeds and vanilla in a bowl and refrigerate for at least 3 hours or overnight.
In a saucepan add sliced strawberries, lemon juice, maple syrup and maple syrup. Refrigerate for 3 hours or overnight.
In a glass jar, layer chia pudding with strawberry jam and top with fresh strawberries and basil garnish. Enjoy!
